ZITI WITH CHICKEN AND VEGETABLES

Full of flavor and goes a long way. Great for parties!
Feel free to use your favorite vegetables and your favorite cheeses.

Serves 6 to 8

Preheat oven to 350°.

Ingredients

  • 16 oz. ziti
  • 1 tbs. olive oil
  • 3 chicken breast halves ( oz approximately 2 lbs.) cubed
  • 1 small onion (chopped)
  • 4 cloves garlic (minced)
  • 3 plum tomatoes (cut bite sized)
  • 2 red pepper (cut bite sized)
  • 1 zucchini (cut bite sized)
  • Broccoli if desired
  • 10 oz. spinach
  • 3 tbs. butter
  • 4 tbs. four
  • 2 cups milk
  • 3 tbs. tomato pesto (sold in jars)
  • ¾ cup grated Parmesan cheese
  • 1 tsp crushed red pepper
  • ½ cup asiago
  • ¼ cup fontina (optional)
  • ¾ cup Mozzarella
  • Salt/pepper

Directions

  • Cook pasta, drain and rinse in cold water and place in large bowl.
  • Heat olive oil in skillet.
  • Cook chicken until almost cooked through.
  • Add onion and cook four minutes.
  • Add garlic and cook two minutes.
  • Transfer to bowl with pasta.
  • In sauté pan or in microwave cook pepper, broccoli, zucchini, tomato until softened ( pprox.. 6 minutes).
  • Add spinach and cook until wilted.
  • Transfer to bowl with pasta.
  • Melt butter in skillet.
  • Whisk in flour until incorporated.
  • Whisk in milk until incorporated.
  • Add tomato pesto.
  • Add cheeses (except mozzarella), crushed red pepper, salt and pepper.
  • Add mix to pasta bowl and place in 9 by 13 greased casserole.
  • Top with mozzarella.
  • Bake at 350° for 30 minutes.
